Profile sensory
A sparkling wine with a lively straw-yellow color and a fine, persistent perlage that enhances the typicity of Ribolla Gialla. The aromas, clean and true to the varietal, evoke white flowers, peach, russet apple, and plum, refreshed by citrus notes and hints of summer hay. On the palate, it is satisfying and generous, with pronounced freshness and salinity.
Tasting tips and pairings
Ideal for a generous aperitif, it pairs perfectly with fresh cheeses, fried fish, and chicken and vegetable couscous. For optimal tasting, a fairly large tulip-shaped glass is recommended, allowing the full expression of its aromatic complexity.
Vinification and Aging
Grapes are selected from the western area of Friuli-Venezia Giulia, followed by gentle pressing and alcoholic fermentation at controlled temperature. Secondary fermentation takes place in autoclave according to the Martinotti-Charmat Method, followed by bottle aging for at least three months.
